The Zárate estate was founded in 1707 in the Val do Salnés zone, home to the region’s greatest terroir and its longest-lived wines. Here, Eulogio Pomares farms the oldest documented Albariño vineyard (the pre-phylloxera El Palomar) and several other grand cru sites. The farming is almost fully biodynamic, and in the cellar, the Zárate Albariños are fermented with native yeasts and aged sur lie.
