Kita Shizuku is a large-grained rice that is highly resistant to the cold and ideally suited to Hokkaido’s frosty climate. The sake reveals initial notes of marzipan and honeydew melon. Hints of wildflower honey and tart green apples define the silky palate. It is medium-bodied and very slightly off-dry. Pair with aged cheeses, whitefish, spicy crab, and steamed bok choy.
