COS is a benchmark producer in Sicily’s Vittoria appellation and one of the most influential producers in Italy. The modern estate was founded in 1980, but the winery itself dates back to the 1880s. COS helped show the potential of Sicily’s terroir, especially its ability to produce complex, pure, and fresh wines, despite its location at the very southern tip of Italy. The Vittoria region is blessed with limestone substrates under 1-2 feet of red clay. The estate was an early practitioner of biodynamic viticulture and was certified organic in 2007.
