Olivier Merlin is an old-school winemaker, producing some of the most serious, long-lived, and delicious wines from the Mâconnais. La Roche Vineuse comes from clay-limestone parcels. The majority of the wine is fermented in stainless steel tanks with 10% going into older Burgundian barrels. Notes of pears and white flowers, with lively acid and a saline finish.
