Northern Spy is James’s favorite apple and was the name of his favorite dog. Northern Spy is the variety planted 150 years ago in the ancient orchard on our Albee Hill farm (only a few hollow trees remain on that horse-drawn-plow terraced orchard). And Northern Spy is the name of the first single varietal cider we ever made. It is a nice showcase of Finger Lakes terroir: what that looks like in a homegrown variety, and what that tastes like in the glass and on the table.
